Fruit Dip (above)
- 1 (8-oz.) ctn. Cool Whip
- 1/2 (12-oz.) can frozen orange juice
- concentrate, thawed
- 1 T. mayonnaise
- 1 T. powdered sugar
- Assortment of fruit
Mix Cool Whip, orange juice, mayonnaise and powdered sugar together in a bowl. Chill. Serve with an assortment of fruit. |

Cranberry Brie Appetizer
- 1/3 C. crushed whole cranberries
- 2 T. brown sugar
- 1/3 tsp. rum extract
- 1/8 tsp. nutmeg
- 1 (8-oz.) round Brie cheese
- 2 T. pecans
- Assorted crackers
Combine cranberry sauce, sugar, rum extract and nutmeg together. Peel off the top of Brie. Top Brie with cranberry mixture. Bake at 450 degrees for 5 minutes. Top with pecans and bake an additional 5 minutes. Serve with assorted crackers.

Cranberry Salad
- 1 (6-oz.) pkg. lemon Jell-O
- Pinch salt
- 2 C. water
- 1-1/2 C. raw cranberries
- 1 C. diced celery
- 1 C. sugar
- Zest of 1/2 an orange
- Juice of full orange
- 1 C. crushed pineapple, drained
- 1/2 C. walnuts
Mix sugar with cranberries. Add orange zest and juice. Let stand until syrupy. Dissolve the lemon Jell-O with boiling water and put in the refrigerator until slightly thickened. Stir in cranberries and celery. Pour into desired mold or dish and refrigerate until firm. Mix nuts with pineapple and pour on top before serving. |

Coconut Coffee Cake
- 1 box yellow cake mix
- 1 pkg. vanilla instant pudding
- 1/2 C. oil
- 4 eggs
- 1/2 C. water
- 1 (8-oz.) sour cream
- 1 C. brown sugar
- 1 C. coconut
- 1 C. chopped pecans
- 4 T. white sugar
- 4 T. flour
- 4 T. butter
Mix cake mix, pudding, oil, eggs, water and sour cream together well. Spread half of the batter in the bottom of a 9x13-inch pan. Mix together brown sugar, coconut, chopped pecans, white sugar and flour. Sprinkle half the mixture over the batter. Add remaining batter to the pan, then sprinkle with the remaining brown sugar mixture. Dot with butter. Bake at 350
degrees for 50-60 minutes. |
Crab Lasagna
- 12 lg. lasagna noodles, boiled
- 1 lb. Mozzarella cheese
- 1 onion
- Salt and pepper
- 1-1/2 C. grated cheddar cheese
- 1-1/2 lbs. crab meat
- 1 (8-oz.) pkg. cream cheese
- 1 egg
- 1 tsp. basil
- 3 T. butter
- 2 T. cornstarch
- 2 C. milk
Make a white sauce: Sauté onion in butter, stir in cornstarch, then milk. Heat to boil. Boil 2 minutes. Mix sauce with crab, Mozzarella cheese, cream cheese, cheddar cheese, egg, salt, pepper and basil until well blended. Layer sauce, then noodles until all is used. Bake at 350 degrees for 1 hour. Let set a few minutes before serving. |

Berried Delight
- 1-1/2 C. graham crackers, crushed
- 1 stick butter, melted
- 1 C. chopped nuts
- 1 tsp. cinnamon
- 1 (8-oz.) pkg. cream cheese
- 1 C. sugar
- 2 (8-oz.) ctns. Cool Whip
- 2 sm. pkgs. instant vanilla pudding
- 3 C. milk
- Any kind of berry you wish
Mix together graham cracker crumbs, butter, nuts and cinnamon. Press into the bottom of a 9x13-inch pan. Beat cream cheese and sugar until creamy. Fold in 1 ctn. of Cool Whip. Spread over the crust. Add your favorite berries on top. Mix together pudding and milk. Pour over the fruit mixture. Top with more berries and then the remaining ctn. of Cool Whip. |

Hurry Up Cake
- 3 eggs
- 1-1/2 C. sugar
- 1 tsp. vanilla
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1-1/2 to 1-3/4 C. flour
- 1 C. scalded milk, cold
- 4 T. butter, melted in milk and cooled
Mix all ingredients together and pour into a 9x13-inch pan. Bake at 350 degrees for 30-35 minutes. |

Easy Pleasing Meatloaf (above)
- 2 lbs. lean ground beef
- 1 (6-oz.) pkg. stuffing mix for chicken
- 1 C. water
- 2 eggs, beaten
- 1/2 C. BBQ sauce, divided
Heat oven to 375 degrees. Mix beef, stuffing mix, water, eggs and half of BBQ sauce together. Shape into a loaf and place into a baking dish. Top with remaining BBQ sauce. Bake for 1 hour. |
